Herbed Shortbread Cookies
These have to be my favorite. This cookie is just a shortbread cookie with very little ingredients. I cut the recipe and just make a few cookies for my husband and I.
The nice thing about the cookie is that the possibilities are endless. Add any herb, I prefer peppermint or lavender. You can roll them in powdered, colored, regular sugar, or chopped nuts or even put a glaze or icing on.
You can grab a tea bag such as Peppermint or Oolong or grab some Rosemary or Thyme from your spice shelf for your herbal addition. Have fun and experiment.
Mint Shortbread Cookies - makes 3 dozen
1 c butter (softened)
1/2 c sugar
1T ground mint (you can get this from a tea bag)
2 c flour
1/4 t salt
Mix butter and sugar, then add the rest. Chill dough slightly. Make 1" balls and roll in sugar (or whatever). Press with thumb. 350' for 12 minutes.
